Ingredients

For the Crust:

  • 1/2 cup (115g) butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1 egg
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp baking powder

For the Filling:

  • 2 cups (300g) fresh or frozen bilberries (or standard blueberries)
  • 1 cup (240ml) sour cream (or kermaviili)
  • 1 egg
  • 1/4 cup (50g) sugar
  • 1 tsp vanilla extract

Step-by-Step Instructions

  1. Make the Dough: In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg. Gradually mix in the flour and baking powder until a soft dough forms.
  2. Press into Pan: Press the dough evenly into the bottom and slightly up the sides of a greased 9-inch (23cm) tart pan or pie dish.
  3. Add Berries: Spread the blueberries evenly over the unbaked crust. If using frozen berries, mix them with 1 tbsp of potato starch to absorb extra moisture.
  4. Mix the Filling: In a separate bowl, whisk together the sour cream, egg, sugar, and vanilla extract. Pour this mixture evenly over the berries.
  5. Bake: Bake in a preheated oven at 400°F (200°C) for 25-30 minutes until the edges of the crust are golden brown and the center filling is set.
  6. Serve: Let the pie cool completely to allow the filling to set fully. Serve with a dollop of vanilla sauce or whipped cream.
