Traditional Karelian Pies

A beloved Finnish classic. These savory pastries feature a crispy rye flour crust filled with a comforting, thick rice porridge. Perfect for breakfast or a hearty snack.

Cultural Significance

Originating from the historical Karelia region, which spans modern-day Finland and Russia, Karjalanpiirakka has become a staple across the entire country. Historically, the filling varied depending on what was available—barley or mashed potato were common before rice became widely accessible. Today, rice porridge is the standard.

Baking these is often a communal family activity, as shaping and "crimping" the edges requires a bit of practice but is highly rewarding.

Ingredients

For the Rice Porridge Filling:

  • 1 cup (200g) short-grain porridge rice (or arborio)
  • 1 cup (240ml) water
  • 4 cups (1 liter) whole milk
  • 1 tsp salt
  • 1 tbsp butter

For the Rye Crust:

  • 1 ½ cups (150g) rye flour
  • ½ cup (50g) all-purpose wheat flour
  • 1 tsp salt
  • ¾ cup (180ml) cold water
  • 1 tbsp melted butter

Step-by-Step Instructions

  1. Prepare the Porridge: Bring water to a boil in a thick-bottomed pot. Add the rice and cook until water is absorbed. Lower heat, add milk gradually, and simmer for 40-50 minutes, stirring frequently until thick. Stir in butter and salt. Let it cool completely (preferably overnight).
  2. Make the Dough: Mix the rye flour, wheat flour, and salt in a bowl. Add the cold water and melted butter. Knead into a smooth, firm dough.
  3. Portion and Roll: Roll the dough into a log and cut into 15-20 equal pieces. Roll each piece into a small ball, then flatten it into a very thin, almost translucent oval shape using a rolling pin (use extra rye flour to prevent sticking).
  4. Fill and Crimp: Spread about 2 tablespoons of the cooled rice porridge in the center of an oval dough wrapper, leaving a border. Fold the edges of the dough over the filling and pinch/crimp the edges with your fingers to create the traditional ruffled look.
  5. Bake: Preheat oven to 275°C (525°F) - it needs to be very hot! Bake the pies on a parchment-lined tray for 10-15 minutes until the crust is slightly charred and crispy.
  6. Serve: Immediately brush the hot pies with a mixture of melted butter and hot water. Cover with a kitchen towel to soften slightly. Serve warm with Munavoi (Egg Butter).
