The secret to authentic Lohikeitto is keeping it simple: high-quality fish stock, heavy cream, and a very generous handful of fresh dill. The use of whole allspice berries gives it a distinctive, subtle Nordic flavor profile.

Ingredients

For the Soup:

  • 1 lb (450g) fresh salmon fillet, skinless and cubed
  • 4 medium potatoes, peeled and cubed
  • 1 large leek, white and light green parts only, sliced
  • 4 cups (1 liter) high-quality fish stock
  • 1 cup (240ml) heavy cream
  • 1 cup fresh dill, roughly chopped
  • 1 tbsp butter
  • 5 whole allspice berries
  • Salt and black pepper to taste

Step-by-Step Instructions

  1. Sauté the Leeks: Melt butter in a large, heavy-bottomed pot over medium heat. Add the sliced leeks and sauté until soft and translucent, about 5 minutes. Do not let them brown.
  2. Boil the Broth: Add the fish stock, cubed potatoes, and whole allspice berries to the pot. Bring to a boil, then reduce heat to a simmer. Let it cook until the potatoes are just fork-tender (about 10-12 minutes).
  3. Add the Salmon: Gently stir in the cubed salmon. Simmer lightly for 3-5 minutes until the salmon is cooked through and opaque. Be careful not to overstir, to keep the salmon chunks intact.
  4. Add Cream & Dill: Remove the pot from the heat. Stir in the heavy cream and the fresh chopped dill. Season generously with salt and pepper to taste.
  5. Serve: Let the soup rest for about 5 minutes before serving to let the flavors meld. Serve hot with a slice of buttered dark rye bread.
